In August of 1998, we opened the first Alfredo’s store in Weatherford, Oklahoma, a community of 12,000 people 75 miles west of Oklahoma City. The original facility was a 1500-square-foot remodeled pizza joint. We could squeeze 45 people into the small dining area; it was truly a community watering hole. There was no waiting area so on Friday and Saturday nights there were more people waiting in the parking lot than there were cars.
